Description:

Kitchen Manager

Responsible in overseeing the day-to-day operation of the kitchen, checks the methods of preparation, portion size, and timeliness of food preparation: controls food usage to minimize waste. Assist in the hiring, scheduling, training and career development of subordinates; provides input on performance evaluations and gives feedback to employees. Ensure kitchen is clean regularly and that all health and sanitation standards are maintained; notifies maintenance department of any need of repairs. Assists in cooking and carving of meats and preparation of difficult dishes during rush periods. This person must help the Executive Chef in writing new menu ideas for the Cafe and Sports Bar. Review the following day's menus and completes requisition for food and supplies needed for varies storerooms and ordering food and supplies from primary vendors. Also maintain inventory control procedures. Assist sales, catering and banquet staffs with banquets parties and all special events.

Requirements

  1. Report directly to the Surveillance Manager, Supervisor or Senior Operator.
  2. Supports other Managers, Directors and Executives with assistance and information relating to the protection of assets in their respective departments, as well as fellow Operators in the performance of their duties.
  3. Understand and cooperate fully with all Departmental and Company policies, including the "open door" policy.
  4. Continuously monitor CCTV, closely scrutinizing all activities within camera range to ensure the protection of company assets.
  5. Maintain a professional relationship with Commission members and their Agents.
  6. Accurately and quickly perform duties as assigned.
  7. Complete necessary paperwork accurately and in a timely manner.
  8. Maintain or augment skills through review and self-study.
  9. Complete any other tasks that may be assigned by Surveillance Senior Operators, Supervisor, or the Manager to the best of their ability.

Must have the ability to repeatedly lift and carry up to fifty (50) pounds. Must be able to lift drop boxes up to standard counter height. Must have the mobility to easily move about the casino area and be able to stand and walk for extended periods of time. Must be comfortable working in small, confined space with the same people for entire shift. Have the ability to reach, grasp, bend, squat, and push/pull heavy carts. Must be comfortable working in a noisy, smoky casino environment.

Required Work Cards/Licenses/Certificates:

Nevada Gaming Control Board registration & Alcohol Awareness training required.
